Gorse Wine

We had never heard of gorse wine before coming upon a recipe recently, but gorse is plentiful here so we picked some on a walk last Saturday. The flowers were soaked with yeast for three days, filling the cottage with the smells of fermentation.

In truth it should be called Gorse & Insect Wine, because it’s impossible to pick the blossoms without a couple of dozen bugs making their way into the pot. I picked most of them out, but I’m sure those left will add to the flavour.
